7 Healthy and Hearty Recipes for Fall

As much as I adore fashion, I also love to prepare healthy meals. What you may not know about me is that I'm passionate about leading a healthy lifestyle. This includes working out daily, tracking my nutrients, and counting calories. The best way for me to eat healthy is to cook my own meals, and I find myself enjoying the process of cooking more than I ever did before. 

Here's a peek at some of my recent meals both at home and in restaurants. As you can see, I really appreciate a good salad! 

Healthy meal ideas on The Key To Chic

If you follow me on Snapchat (@thekeytochic), then you've likely seen a peek of what I'm cooking up and consuming on a regular basis: salads with lean protein, scrambled egg veggie wraps, stuffed bell peppers, seared ahi tuna, baked eggs with vegetables, fruit salads, chia oatmeal, etc. During the fall, I lean more towards warm dishes such as oatmeal, soup, and steamed vegetables. November is one of my favorite months because as Thanksgiving approaches, I love searching for and trying out new recipes. 

Today I'm sharing seven of my favorite fall/winter recipes which can be found on my Pinterest Nutritious Nourishment board. I've tried most of these recipes, so I can testify to their deliciousness. All of them are healthy and if you count calories like me, then it's easy to make any substitutions and adjustments if necessary. (I avoid maple syrup, agave syrup, butter, honey, and cream when cooking and instead, I use unsweetened almond milk, cinnamon, or coconut oil. I also use nuts in very small quantities.) 

Let's get started with breakfast, my absolute favorite meal of the day.

I've eaten oatmeal for breakfast ever since childhood, so I consider it comfort food. This pumpkin pie recipe from fannetasticfood.com is filling, low in calories, sweet, and so tasty! I use less milk in my recipe and add chia seeds for extra protein. 

peanut butter and sliced fruit recipe

Peanut butter is one of those foods I love too much. Unfortunately, it's high in calories, so I have to eat it much less than when I was younger. (Or I skip it and use PB2 instead.) This reduced calorie peanut butter and fruit snack from popsugar.com incorporates another favorite food of mine - Greek yogurt. The added protein is great for a boost of energy, and the sliced fruit makes it guilt free. I omit the maple syrup in the recipe and load up on apples (or even carrots).

Vegetables are beloved to me (I simply can't get enough!), and this rosemary green bean recipe from myrecipes.com is not only delicious, but easy and quick to make. It's a healthy substitute to the traditional green bean casserole that pops up around Thanksgiving.

turkey stuffed zucchini recipe

I made this turkey stuffed zucchini recipe from skinnytaste.com a few weeks ago, although I added a brown rice/ quinoa blend and omitted the corn and beans. I also added salsa and cilantro on top before serving. Yum! It also works well with bell peppers instead of zucchini.

healthy mashed cauliflower recipe

I tried this mashed cauliflower recipe via builtlean.com last week and it tasted just like mashed potatoes. In fact, I'm so obsessed with it that I might never eat mashed potatoes again. I added minced garlic and almond milk in my version for extra flavor. I love this for Thanksgiving!

Herb Crusted Salmon recipe

This herb-crusted salmon recipe by Martha Stewart is so savory. I've made it a few times and I use low calorie whole grain bread by Nature's Harvest or Sara Lee as well as cilantro instead of parsley.

I eat chia pudding on a daily basis. It's an excellent source of protein and pairs well with fruit, nuts, almond milk, and cinnamon. This blueberry chia seed pudding by delightfulemade.com is rich in anti-oxidants and could work well as a healthy breakfast, a snack, or even as a dessert.

Thanksgiving Food and Fashion

With Thanksgiving around the corner, I tend to get in the mood to cook (and eat!) more in November than at any other time of the year. Thoughts of my mom's candied yams, succulent stuffing, and garlic mashed potatoes always bring a smile to my face. 

Although I blog mainly about fashion, I'm also passionate about both food and fitness. What you may not know about me is that I eat healthy and exercise daily. My goal this year is to bring a new dish to the Thanksgiving table that won't incite fears of overly tight waistbands or inevitable holiday season weight gain. 

Last year I found a delicious recipe for roasted sweet potatoes and apples, and I've made it a few times to rave reviews. I have a major weakness for sweet potatoes, and the good news is that they are loaded with nutrients (such as beta-carotene, potassium, and vitamin C) and not with calories! Here's my adapted version of the recipe. 

You'll need:

3 large sweet potatoes, peeled and cut into 1-inch dice
2 Honeycrisp apples
extra virgin olive oil
sea salt
1/2 Tb cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
juice of 1/2 a lemon
2 springs of fresh rosemary or 2 Tb dried rosemary
1/4 cup chopped walnuts
dash of cayenne pepper 

Thanksgiving roasted sweet potato and apple recipe

Preheat the oven to 350 degrees F.

In a large bowl, toss the sweet potatoes with some olive oil, salt, cinnamon, nutmeg, allspice, and a dash of cayenne pepper. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.

Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and rosemary. Lay them out on a sheet tray and place them in the oven during the last 15 minutes of the cooking time for the sweet potatoes.

When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.

Transfer the sweet potatoes and the apples to a large bowl and coarsely mash them with a potato masher for a softer texture as desired. Taste and adjust the seasoning if needed.

When I think about Thanksgiving and fashion, comfort always comes to mind first. I want to wear something that won't be too restricting in case I can't resist helping myself to seconds.

This graphic print skirt is a bit dressier from my skinny jeans, so I look like I'm making an effort, but I'm equally as comfortable. Plus, the skirt has a stretchy waistband, which makes it a no-brainer.
